Nanostructured Particle Formation during Fat Digestion and Drug Delivery

Microstructural Imaging Studies

We have a number of possible projects in this area dealing with the fascinating self-assembly of monoglycerides in water, as occurs whenever we ingest and digest fats. Such materials naturally form extremely viscous nanoparticles with unique molecular structure that are useful as active and drug delivery vehicles but are also critical for nutrient processing.  The goal of this work is to understand the kinetics of these structural changes, their dynamics in a flowing fluid, and their rheological behaviour that determines their size and ability to transport chemicals.
